Beth’s Mouth-Watering Chocolate Muffins
Ingredients (makes 12):
120g plain flour
60g sugar
100ml milk
1 medium egg
25g coco powder
1tsp baking powder
2tbsp oil
Milk/white chocolate chips
Method:
1. Preheat the oven to 160C/320f
2. Sieve the flour, coco powder and baking powder together in a bowl
3. Mix the egg, milk, oil and sugar together in a jug
4. Pour the egg mixture into the bowl (adding chocolate chips if you wish!) and mix until combined but still slightly lumpy
5. Spoon the mixture into your cake cases and put the tray in the oven for around 20 minutes or until set
6. Leave to stand, then enjoy with cream, custard or just by themselves!
